but when I remove the echo step and try to grep the environment variable like this.
export pipelineScriptVar='This is a var'
env | grep "pipeline"
I am getting the expected output.
In your case you are declaring pipelineScriptVar inside a string called script, so when you run this script variable as shell jenkins consider pipelineScriptVar as jenkins variable not a shell variable.
So you can use '\' to suppress the string notation of jenkins. Use '\' before ${pipelineScriptVar} like \${pipelineScriptVar}. Hope you find this useful
When you use double-quotes(") surrounding your script(or any other String variable) the string is interpolated and the variables are replaced by Jenkins. So instead of surrounding with double-quotes surround your script with single-quotes.

I have a problem with getting env properties dynamically in Jenkins Scripted Pipeline. I have a String key in the pipeline. Let's call it key.
The key is obtained by concatenating two strings:

Although this would work on plain Groovy, using the following syntax env[key] is not working here because pipeline is running inside a sandbox, where this type of access is not allowed.
You have two options there:
1 - Using Groovy gstrings and change env[key]to env."${key}" completely avoiding the sandbox error.
2 - If you still prefer this way of access, whitelisting the method on Jenkins management section called 'In-process Script Approval'. After doing that and running pipeline again, you should not see the stacktrace anymore.

1) There are two types of pipeline in jenkins.
Declarative and Scripted.
You mixed two types of syntax and keyword's from both.
node is a keyword for scripted pipeline.
But in beggining of script you declared Pipeline script. So to fix this error, you need remove node.

I am attempting to auto tag my image through my jenkins pipeline and it isn't working as I would expect. I am not good at pipelines and I am probably missing something elementary but any help would be appreciated.
I am hoping to use the built in {env.BUILD_NUMBER} variables that Jenkins provides. I can echo out the build number but not pass it into my "imagebuilder" command.

For reasons that I fully don't understand the problem was the my "KEY" Attribute (An Oauth Key that is used for Github) was not properly getting injected in the the jenkins slave at time of build. It is in my dockerFile and when I ran it locally it existed so I don't know why it wasn't able to be read by Jenkins.
The solution that I came up with was to use the Jenkins Environment Variables in the system settings and it worked fine.
I wish I knew why it wasn't able to see it but I don't have time to diagnose it as the Jenkins Envionemnt Variables meets my needs (and isn't a major compromise).
For now with this script hundred of builds was done. After Jenkins update the groovy script is not running anymore. It is not getting even to the first stage. The error which I can see is misleading for me, as the 'Script' is the name of folder in my case. To be sure if everything is fine I regenerated the dir command with the jenkins built-in syntax pipeline generator and I got:

Except updating from 2.6 to 2.66 I also updated all plugins to the latest ones and disabled CLI remote-smth (but it is rather for remote access over the ssh, not to run local commands I guess).
I have no clue, what does this error may mean as the Script name is the folder name, and there is no other Script name used inside.
It occurred that multibranch plugin has troubles with the link inside Jenkinsfile. When I over write the Jenkins file content with the groovy script it started to go further.
