I am trying to load my jQuery UI datepicker field with the FULL date shown. So I do the following:
$("#reminderDate").datepicker({ dateFormat: "DD, d MM, yy" });
However, when the page first loads, the the date appears in default format mm/dd/yyy, but after I select another date it changes to full format. What am i missing?
Whatever server side language you're using to output the value of that <input> element needs to format the date so that it matches the format you're using in the date picker. The datepicker won't auto-format the value that's originally set against the <input> element.

I' have 2 text fields 1st one for giving date from and the other one for date to, what i want is while i'm selecting date from using 'calendar:datePicker' the dates before current date must be disabled and if i have selected a date 1/6/2014 in 1st text field, when i select the date to from the 2nd one the dates before 1/6/2014 must be disabled how can i achive this..?

That looks like an old plugin and it might not have the option that you need.
Use jQuery UI instead: http://jqueryui.com/datepicker/#date-range

I have a form where you click in start_date and a jquery calendar comes up to pick the date. I want to display the date as (ex.) September 25, 2012, but I also need rails to comprehend the correct start date not just output it correctly.
What do i need to add to this?

Take a look at the altField and the altFormat options for the datepicker.
You can store the Rails-friendly date in a hidden field and pass it to the controller, and display the user-friendly field to the user.

The text field and the pop-up are linked in that I can use the calendar and the field shows the correct value (or blank) initially.
But they are not linked in that the pop-up is always for the current month, not the month of the db field value.

I added the dateFormat per dimuch which seemed promising but it didn't help yet.

You probably have different date formats in the datepicker and content_date field. Take a look at this fiddle http://jsfiddle.net/wKNXx/
I'm using a jQueryUI datepicker for a simple "From" & "To" date range filter in my ASP.Net MVC web-app. Works fine until I hit a machine which had its datetime format (in the Regional Settings) set to "dd-MM-yy".
In my controller I've a postback action which accepts a custom search object as a parameter which is then passed to the search function. This custom object has the properties for "To" & "From" dates and as usual the binding takes place automatically. Works normal on a machine with date format "MM/dd/yy" but if I set it to "dd/MM/yy" in the regional settings then it is unable to parse the date.
The easiest solution could be to change the datepicker's format to
"dd-MMM-yyyy" a non-culture specific date format but my client wants
the selected date to be displayed in MM/dd/yyyy format.
Any clean and easy suggestion to handle this at the datepicker or controller level?
You can use an hidden field with a custom format:
