Does Google Cloud Build keep docker images between build steps by default?
In their docs they say built images are discarded after every step but I've seen examples in which build steps use images produced in previous build ones! so, are built images discarded on completion of every step or saved somewhere for coming steps?
Here's my cloudbuild.yaml.

Yes, Cloud Build keep images between steps.
You can imagine Cloud Build like a simple VM or your local computer so when you build an image it is stored in local (like when you run docker build -t TAG .)
All the steps run in the same instance so you can re-use built images in previous steps in other steps. Your sample steps do not show this but the following do:

P.D. The reason I asked where did you read that the images are discarded after every step is because I've not read that in the docs unless I missed something, so if you have the link to that please share it with us.

In documentation they say we can build and deploy container from cloud container registry to cloud run using cloudbuild.yaml file:

I want to pull image from docker hub and build and deploy this image to cloud run using cloudbuil.yaml file but I don't know how to do that as I am new to docker and cloud run.
I suspect this question is slightly too broad for Stackoverflow.
You would probably benefit from reading the documentation and learning more about these technologies.
The answer also depends on security constraints.
IIRC, Cloud Run requires that you deploy images from Google Container Registry (GCR) so a key step is in transferring the image from DockerHub to GCR (docker pull from DockerHub; docker tag for GCR; docker push to GCR).
If DockerHub requires authentication, you'll need to login to DockerHub before you can docker pull from it.
If GCR requires authentication (probably), you'll need to login to GCR before you can docker push to it. Commonly, this is effected by granting the Cloud Build's account write permission to the storage bucket that underpins GCR.
All of this is possible using Cloud Build steps (see: cloud-builders)
Once the image is in GCR, you can use the gcloud step to deploy it
These steps can be effected using Cloud Build (cloudbuild.yaml), something of the form:

You should spend some hands-on time with docker. You can pull an image and push it to a different place like this:
docker pull ubuntu
docker tag ubuntu gcr.io/.../ubuntu
docker push gcr.io/.../ubuntu
I'm not sure how and why Maven is involved here.
I have a yaml file that builds the image. The image was successfully built using the github trigger where I got the confirmation as follows:
Successfully built cd57cea98cac
Successfully tagged gcr.io/my-project/quickstart-image:latest
PUSH
DONE
It also says the push is done though I don't know if it means the push to Google Container registry since I cannot find that image on the project's Google Container registry.

I have two or more Docker images where the latter ones are based on the first image. I want to build them all with Google Cloud Build and have the following multi-step cloudbuild.yaml:

You are pushing the image to gcr.io, but it looks like your Dockerfile specifies a base image in the eu.gcr.io registry. Try changing your Dockerfile base image to FROM gcr.io/logistikhelden/lh-build.
If I'd like to build a docker image in one pipeline step, then use it in a following step - how would I do that?

You would use Docker Save/Load in conjunction with bitbucket artifacts.

First, build stage is doing great, but there is a problem with the second stage when I'm trying to build and push my docker image.
I get this log :
Cannot connect to the Docker daemon at unix:///var/run/docker.sock. Is the docker daemon running?
It seems that Gitlab is using a shared runner that can't build a docker image, but I don't know how I can change that. I cannot change the configuration of my runner, because I'm using shared runners. I also tried to put some tags to my second stages, in hope that a more suitable runner would have to take care of my job, but I'm still getting this error.

I believe you need to set DOCKER_HOST to connect to the DinD running in another container:

Even we have faced the same problem in our org. We found that there is a long standing issue with the docker in docker area for gitlab which can be tracked in these issues #3612, #2408 and #2890 as well.
We have found that in our case using docker binding was much suitable for our usecase than the docker-in-docker one. so, we used the solution in their official page.
I know this has been already answered but this may help some one who have a similar usecase :)
