I am trying to change the default button to delete a row in a tableview (when the user swipe left).

You need to set UIImage to backgroundColor of UITableViewRowAction.

I'm trying to customize the where the delete option has a red background and a trash icon. So far from what I gathered and implemented I have a repeating image in the background and not sure how to make it red or show only 1 trash can image

if you want to change the text of the delete button, conform this method in the UITableViewDelegate:
func tableView(_ tableView: UITableView, titleForDeleteConfirmationButtonForRowAt indexPath: IndexPath) -> String?

To delete the item from the array conform this method

You can either use default delete action and change its title like this.

My tableView's commit method gets called fine when the user swipes and deletes a row, but if I attempt to customize the color/text of the action by using editActionsForRowAt then it stops being called.

Why does adding the editActionsForRowAt method stop the commit method from getting called?
When using editActionsForRowAt the commit function won't be called. Instead of putting your code in the commit function, put it in the closure on the UITableViewRowAction:

So i've searched the site for an answer to this question and there are some decent results but nothing recent since Xcode 7 is no longer in beta and swift 2.0 is now the standard.
I've used the following code in order to make it so that a 'swipe left' feature will cause something to happen to a UITableViewCell -

The feature is available on iOS 11.0+ and Mac Catalyst 13.0+. For options on the left use the leading and on the right use the trailing methods.
Just implement the UITableViewDelegate methods and return your UISwipeActionsConfiguration object. You could optionally include an image or just the text as the title of the button.

In my app I have a tableView in witch I have default text and I would like to have a swipe to edit text function so the user can change the text if the want to.
I already added the swipe to delete, using the code below, however adding an editing text function isn't as easy to find information on, So my question is, How can I add a button so the user can edit the text via a swipe function?
I need to know the code to load the text as I can't have a textfield so it's not as easy as something like label.text = textfield.text
