When I created my App in iTunes Connect, I've chosen "Bühne GmbH" for the company name.
But now, everywhere it is displayed, it only shows as "B�hne GmbH".
Im a bit afraid now. Is this going to be displayed like this in the AppStore? And what have I done wrong, or is it just Apple not using UTF for the company name?
Besides that, "Bühne GmbH" works just fine as the app's name.
Is there a way to fix this or do I have to contact Apple?

I asked them to change it, but they do NOT allow special characters in the company name, they have to be ASCII, i think.
It will now be displayed as "Buehne GmbH", which is kinda ugly, but yeah.
In my opinion contacting Apple will be a good idea, because according to iTunes Connect Developer Guide:
Note: The first time you add an app is your only chance to set
a company name distinct from your legal entity name .
So my suggestion is don't take risk, contact Apple.

I had published an app to AppStore and the app has been listed in the search result. But due to some reason, my app doesn't display in the search result with the original name.
For example, if my app name is Hide&Seek and when I just put Hide Seek it displays the result but not for the original name. There wasn't any issue with the app search before.

How does the App Store search algorithm work is something that only Apple knows about and the App Store team doesn't make any information about it public.
So, someone from the App Store team can answer the question for you and help you with that.
You should consider contacting the right team/person within Apple. Here's some pointers for you to get started.
(I'm assuming here that your app is published on the App Store and you have an active membership to the Apple Developer Program.)
Login into your Apple Developer Account Portal and click on the Contact Us link shown in the left sidebar
You may consider raising a Technical Support Incident. While it's meant for seeking code level help from the engineering team, if the above approach doesn't yield a result (which I suspect won't be the case), you may try considering this approach. An active developer program membership is eligible to two technical support incidents in a single membership year, and additional two incidents can be bough for $99.
You may want to consider contacting App Store Support.
I am hopeful you'd be pointed to the right team and they should be able to address your query.

If you want to change the Copyright you can do it easily by yourself.
Otherwise the easiest way to change your seller name is to:
Contact Apple developer support. If there is a typo or inaccuracy in
your seller name they should be willing to change it. Back before I
released Card Share my individual account had a seller name for a
fictitious entity that did not exist. Since it wasn’t my legal name,
Apple support was willing to make the name change. I contacted support
and within 24 hours my seller name was changed and updated in the App
Store. The results from this method may vary, but I highly recommend
direct communication with Apple as a first approach.

You can only transfer
apps that aren’t using Passbook IDs, certificates, or notifications.
Everytime when I try to transfer my app, I get the above message in iTunesConnect.

Check the app settings in apple developer. While you might not actually coded anything, you might have ticked the wrong box when you set the profile. If you did, that's might explain it.
An alternative, which you'll need to check with apple (sorry), would be to rename the app. Once done, then you might be allowed to use the name in the new entity.
If the app has been submitted for app store review, or if you have released it in the past, you might need to submit another copy in the new name. If/when approved, the old name, at least in theory, should become 'available'. Then, change the code signing, and submit via the new entity.

Is there anyone who has recently (like within the last 3 months) registered an Individual Apple Developer account? When you first logged into iTunes Connect, did it provide you with the opportunity to set the artist or ‘company’ name that appears above your app in the store (in search results, etc.), that isn't your legal name?

Previously with an individual account, your legal name appeared as the seller, however, you could set any name you wished to appear as the company name, but you could not change it afterwards. However, as corban said below, it is now apparently not possible to set a company name for an individual account, so if you want a company name, you will have to register a company account (and do all the related legal crap).
Yes, even with an individual account you are allowed to set a company/artist name when you create your first app in itunesconnect. This can be different from your legal name.
The legal name (with which you registered as a developer) comes up as the "Seller" of the app (below the app icon, in small print, in iTunes) whereas the artist/developer name is the name you enter in iTunesconnect and what shows up on the top in iTunes.
Apple has removed the possibility to add a company/artist name for an individual account. There are some discussions in the apple forums about that. I hope that there will be a possibility to add one.
I've written an iOS app and would love to name it "X", but that name is taken. The existing app isn't very popular, and the author is willing to rename it for a fee. Suppose we agree to do this, does the old name become instantly available to everyone, or does Apple hold it as unavailable for some time, perhaps forever?
If the old name is locked forever does Apple allow me to just buy out his entire app (he is willing), and then publish completely different content using the same name and app id? We might need to change the category as well.
Yes. I've done this a couple times. I used to own an app called Note To Self. Someone made me an offer to rename it in exchange for a nice payment. (In case you're curious, he offered me more money than I would've made in 1 year for the app. So of course I was interested in the offer!) I took down my app, and the name was instantly available. The other developer was able to register it right away while we were on the phone. (He was already logged into iTunes Connect and had the name typed out. All he had to do was press the "Continue" button once I renamed or deactivated my app).
I've done this a few times when trying to brainstorm names for my other apps as well - simply renaming an app makes the old name available instantly for anyone else.
Note: The name we're talking about is what's shown in iTunes Connect, which is what users would see in the App Store. What you name your app in the iOS Developer Center's Provisioning tool has no significance.
For anyone reading this, please don't misuse this flexibility by squatting on names which you don't intend to use.
