I am trying to post a form from one rails app to another hosted on different domains and including files.
I attempted:

But the remote server doesn't receive any data, params merely contains the controller name and action.
I also have tried using remotipart and setting up my form with form_for(#application, url: "http://example.com/action", html: {multipart: true}, remote: true) and if I include a file, the server receives [object Object] instead of correct param names and values. If I do not include a file, then the params are sent and received correctly, but I need to include files with the upload.
What is going on to cause [object Object] to replace all my form data when I include a file? Using remotipart 1.2.1. And I've seen this and it does not apply.
There are a lot of issues with attempting what you are:
Cross Domain Requests (CORS)
Form
Uploading
CORS
Your first issue is you have to ensure you're able to pass the data between the two domains. CORS is a standard protocol, whereby you can only send requests to pre-approved domains
Basically, you need some way to whitelist the possible connecting domains, and with Rails, you'll be best to use the RACK-CORS gem
I would begin by ensuring this is set up on your "receiving" domain
Form
Secondly, you need to compile the correct form data when you submit
I would use the .serialize() function:

This will probably explain the lack of params being sent to your other domain
Upload
Uploading files creates a totally new issue, as it takes a lot to get the file-upload process to work through ajax
There are plugins such as JQuery-FileUpload-Rails allow you to upload files through ajax. From my understanding, this works by providing custom middleware to handle the file upload over ajax. I'm not totally sure how it works, but I know it does, as we've used t multiple times
In general, you cannot directly upload files from a form via AJAX. You have to 'fake' it using either a hidden iframe, Flash, or something similar (might be different in the newest browsers). The jQuery Form plugin does a good job of simplifying this, and there are lots of other plugins as well to help with this.

I can't comment because I don't have enough rep. But you need to supply a little more information.
What's the failure message in the rails server logs? Check the rails server output and copy paste the errors into your question. Also, open your browser console and paste the "console" or "network" errors (in chrome: OPTION+CMD+I to show console). Lastly, throw a debugger; statement into your ajax call and play around with the variables.
I have a button to start a google hangout, everything works great, now I need to get the url using the
gapi.hangout.getHangoutUrl();
but I since this is a JS on my server, I know is possible to pass this to my app. But I don't know how (AJAX or anything else). I need this, because other user could join to this hangout.

Handle the AJAX GET request and do your magic with the hoUrl parameter.
To clarify further:
A URL is formed before the AJAX get request to include a GET parameter, hoUrl, that has the hangout URL in it. Your server just needs to use whatever CGI/parameter parser to retrieve the 'hoUrl' parameter and then do whatever backend magic you want to do with it. Hope that helps to clarify.
I am using query mobile for a phonegap application, I am passing through parameters through the url to the next page.
For example:
main.html?id=1, menu.html?id=2 etc
To allow this I have to turn ajaxEnabled to false to allow it to pass through the information I need. In doing so I am unable to use transitions from page to page which means I get a white flash as the page reloads.
I am generating these links dynamically.

I think he is concerned about the "white plash page" that happens after the request is completed from server and then he calls changePage.
He is not worried about how to send parameters to server etc. This is assuming all that is working fine.
This is my code for the .ajax() call:

In addition to using type:"POST" as above, I also tried using $.ajaxSetup({type: "post"}); above this code block.
In both cases, the values in the data key are being appended to the URL. I want a clean URL with no parameters. This code is actually a part of an autocomplete field, it's wrapped into an anonymous function and given a key source like the main jQueryUI examples.
Note The actual URL is immaterial, I don't know if geonames supports POST requests but that's going to change later, this is just an example.
Simply add your parameters like this :

If you want to force POST, you can try jQuery.post()
It is not possible to make a POST request with the JSONP datatype.
JSONP works by creating a <script> tag that executes Javascript from a different domain, it is not possible to send a POST request using a <script> tag.
If you specify dataType: "jsonp" and type: "POST", the "jsonp" takes precedent and it gets sent as a "GET" request (the "POST" gets ignored).
In terms of making a an AJAX call, we have use the following method:

Notice how it makes a call to the controller and returns a value. I was wondering if there was a better way of doing this. I know .NET MVC has some ajax calls built in but couldn't find one that fits what I am doing below. I know .NET MVC has a ajax call build that with a hyperlink but that is not what I need. I just need to make a call to the controller that returns some value(s).

There's only one thing that you need to fix:
async: false
must become:
async: true
because otherwise you are not doing AJAX. You are sending a synchronous request to the server freezing the client browser.
Other than that you seem to be doing some remote validation with this AJAX request. You probably might take a look at the [Remote] attribute that's built in and which avoids you writing all this code. All you need to do is decorate the view model property that needs to be validated with this attribute and then enable unobtrusive client side validation by including the proper scripts.

I recommend you learn about data annotations to validate that kind of details (please revalidate on server at submit form like a good practice)
