In my app the users should have input all the info above before they came to the Apple Pay button, so I will just get the data from the data manager and pre-populate the sheet.
I know it's not kinda the right way to implement Apple Pay but this will just be a quick implementation of Apple Pay and the UI will be improved in a future release.
So just wondering can we disable Email, Phone and Address editing in the Apple Pay sheet.

If you already have the shipping information why are you requesting it in the Apple Pay sheet at all? Simply have your PKPaymentRequest not request it. There is no way to make the fields in the Apple Pay sheet read-only, so that is probably your best workaround.

I am currently trying to find if it is possible to create a dashboard to my companies loyalty pass, similar to the one that Apple has created for their own Apple Card.
I have been able to add just a text on the card that updates whenever I send the notification, but I am looking to display more stats about customers purchases. I have not been successful in finding guidance about this on documentation, so it could be that Apple doesn't allow that yet to anyone else. The good news is that this can be done. What you are looking for is In-App Provisioning of Payment Cards. This is done using the PKAddPaymentPassViewController, which requires the com.apple.developer.payment-pass-provisioning entitlement key for your app. The bad news is that not anyone can submit apps with this entitlement as it requires special permission from Apple, which I believe is reserved for card issuers like banks and similar. If you believe that you qualify you need to contact Apple directly at apple-pay-inquiries#apple.com.

I'm making an app where I need to collect user credit card info at some point so I can charge them later. Right now I use stripe and their PTKView to collect credit card info and store it. Then later on when the user wants to pay I'm ready to go and they don't have to do anything else. I would like to add the option for a user to import a card from Apple Pay that I could then use later on. However, it seems to me that when using Apple Pay I have to charge the user right then. I am curious if anyone knows a solution for this problem or if I just have to create a "Pay with Apple Pay" option on the last screen before the user pays. This would not be preferable but currently it looks to be my only choice.

You need to create an Apple Pay payment option that is equivalent to your in-house payment option wherever the user decides how the transaction will be processed. Do note though that creating the token and processing the payment are separated operations, though it's unlikely you'll do one without the other in normal circumstances.

All,I am making app for reminders & its kind of social reminders. I can share my reminders with my contacts. I want to make it like whatsapp. Can we use user's mobile number for this purpose? Or will apple reject it? Please tell me more, if anyone has done such app before?

You can ask user for any information, no matter how personal. In terms of Apple guidelines, here's a few things to bear in mind:
asking is fine, but taking (via a hack or whatever) will get you bounced.
the ask has to be essential to the service the app delivers. in other words, it's perfectly okay for a retirement calculator to ask about how much money user has in the bank, but not so okay for a tic-tac-toe app.
editorially, be very clear and honest about how you'll use the information (Apple might not catch you here, but you should do this anyway to motivate the user's answer).
the app must remain functional even if the user opts not to provide the information. for example, the retirement calculator should supply a default bank balance and carry on.
I would like to add new version for my application in itune, but Apple asked me to fill App Review Information with info like name, email ,tel number.
I wonder if this details will be visible to users of itune/appstore, or it just for Apple.
The "App Review Information" is strictly for Apple. Users will never see that information. The data is there so Apple can contact you if there is a problem found while reviewing your app.
I don't believe so. Typically I've seen an LLC or maybe a developers name, but as far as contact information goes, I have not seen that. Perhaps providing a way for users to contact the developer though would be handy to receive, and subsequently implement feedback.
