I have created a Sencha Touch Application. I have successfully deployed the application to Android using Cordova. Now I have to deploy the application for ios platform. But the problem is that I am using Linux platform and right now I dont have a Mac. Also, the application which I am building is only for demo purpose which will be only used in our company. It will not be published on Apple Store. So is it possible to deploy sencha app to ios without using mac?. If yes, please suggest some link/tutorial or give some steps for deploying the app.

No you will need a Mac, since you need to iPhone SDK to deploy an app.
Even if you are just building a demo you will need a paid iPhone developers account to register you test devices.

As an Ionic/Cordova app developer on Windows, I've been using PhoneGap Build to create and sign my iOS apps before using MacInCloud to upload them to the App Store via App Loader. Unfortunately as of today, Apple requires iOS SDK 13 for uploading apps to the App Store. PhoneGapBuild does not support SDK 13 yet and there's no roadmap or idea of when it will start.
As I mentioned, I use MacInCloud to upload my apps and I'm curious if anyone has a way to remotely build the apps on iOS outside of uploading all of my code and using the Cordova or Ionic CLI via Remote Desktop.
Or hey, maybe you as a developer on PC have another way to build iOS apps. I've very interested in hearing how you're building apps now that PhoneGap Build is no longer an option.

I gave the VirtualBox route a shot and wow, that was messy. I ended up just settling with logging into my MacInCloud account every time I was to create an iOS build and just dealing with that. Much cheaper solution than appflow.
I am new to mobile development, working on my first app for both iOS and Android. I was under the impression that I can develop it through Ionic once (on my Linux system) and deploy it for both, but recently found out I need to develop on a Mac for iOS?

My question is, at which stage do I need a Mac? Can I do all the development on my system and then just deploy with a Mac? Did I need to do something special from the get-go to support iOS? I am already rather deep in the process, but should I be considering a different framework?
I do find it strange that this knowledge doesn't seem very explicitly available.

If you want to do a build for the iOS platform you will always need a macOS based operating system with xcode installed at some point. You can do all the coding on your linux machine as the hybrid part will be the same for all platforms. But if you want to test or deploy the iOS version of your app you will need either a mac or you will have to use some third party service where you can upload your sourcecode and you get a ready for install .ipa back. Ionic itself offers a service like that: see Ionic Package Service

you can also use some virtual machines but they can be illegal and I don't recommend them
I successfully built my app for Android, but naturally things are not that simple for IOS for a windows user.

I use windows to develop Ionic. In order to build for IOS I have installed VMWare on which I emulate MacOS X, installed xcode and all the tools necessary for building ionic. I have been able to test and deploy my apps to an ios device through usb with ionic/xcode. However I haven't push any apps to the app store yet. I really dont get it. I see I can develop Iphone Apps with
xcode (objective-c / swing)
xamarin
phonegap
titanium appcelerator
....
But do I need a Mac even with phonegap etc. or is it possible to develop on windows with those Frameworks?
You can completely develop iOS in Mac using Xamarin with the help of Xamarin Live Player.
You can debug,develop and deploy without any help of mac but to sign and release the app you will still need a Apple system
You need an actual iOS device to fully develop and test all of the app's device features before submitting to the App Store. More here.

Therefore it should also be possible to do the same with a cordova app.
I am a bit confused because in the official documentation here it is written that such an app can just be created on a mac.

its not possible to publish app to applestore without mac.
