As you can see in the image I have the IOS 5.1 version installed in Xcode for the simulator, but surprisingly I can select it in a project but not in the other.
Why is this happening? Any clue?
The project's deployment version is probably set to iOS 6 or 7.
Check that the deployment target is set to the lowest version of iOS that you want to support. Select your project in the Project Navigator and then check the Deployment Info section under the General tab:
Because You have installed ios 5.1 Simulator
In second image that is your 1st project it is display both ios5.1 and ios7 both because you have set its deployment to 5.1,
and for second project deployment target is selected only ios7, so..
set project's deployment version to iOS 5.1 , and check.

I downloaded ios 10.3.1 version in xcode 9.4
But I only can select the ios 11 version I already have.
I rebooted OS and restarted Xcode already. I also can see ios 10 simulator when I select "add additional simulators"
There are ios10, 11 simulator both of them. I don't know how to use ios 10 simulators in xcode that I already downloaded.
Change Deployment Target from iOS 11.x to iOS 10.x
(Xcode shows simulator in a device list with iOS version >= Deployment Target.)
If I understand your problem correctly, changing Deployment target should help. It can be found in General section of settings shown when you first launch the app.
To use that the project compatibility should be lesser. That means the Deployment target in your app should be from iOS 10.
Go to project target settings. Deployment target --> 10.x
As the previous answers didn't help me, I'll describe my solution.
The deployment target doesn't always solve the problem, as well as creating a new scheme. The simulators don't appear automatically.
Press Add Additional Simulators
Choose Simulators tab
Create a new device simulator. Choose Device Type and OS Version whichever available
Your simulator should appear
I have set my project's deployment target to iOS 8.0,but using the development certificate when i am trying to make a build on a iOS 7 device,it is getting installed.Should it be like that?I do not want to give support to iOS 7 when i will finally put my app in Appstore.

Have you set Deployment Target to iOS 8.0 in both Target and Project?
If not then try to do that and then again try to install app in iOS 7.0 device.

As i need my application to run on both iOS 6 and iOS 7, i have set my "iOS deployment target" under "Project" as well as "Targets" to iOS 6.0. However, after doing this, when i create an ipa file and install it on my iPad (that runs on iOS 7), i see everything converted to the look of iOS 6 - the searchbar, the keyboard etc etc.. Why is this happening??
I thought that on iOS 7, all my UIComponents will look as intended in iOS 7 and same thing will happen in case of iOS 6, when i run it on a device that is running on iOS 6! why is everything messing up???
Likely it depends on the Base SDK that you selected.
If you are using Xcode 5: select your project on the left panel, then click tab Build Settings, check that your Base SDK is "Latest iOS (iOS 7)".
You should always use the latest sdk as Base SDK, it represents the SDK used to build your app against.
If you want to support old iOS, you should just change the Deployment Target
Check it for both your target and project, since target overrides project settings
The problem was: I still had iOS 6.1 sdk on my system even when i upgraded to xcode 5. deleting the older version of sdk and cleaning and building my target solved my problem..
I'm about to update my iPad app. I've not added any new features from iOS 6, however, one of my testers is telling me that he cannot update because he's stuck on 5.1 with a iPad 1. My project's BaseSDK is set to 6.0, however the deployment target is set to 5.1. I would think that that should still work for iOS 5? What am I missing?
Check your target's Deployment target. This can be different than the project's deployment target. A Deployment target of 5.1 for the target will allow the app to run on a device with iOS 5.1.
Till yesterday only I was able to test my applications both on iPhone simulator as well as iPad simulator. But now I can run the application only on iPad simulator. It is working fine on iPad simulator. But if I select iPhone simulator and try to run the application, the iPhone simulator does not even show up. I am not able to understand the reason behind. I have checked all the settings repeatedly again and again.

Make sure your project's Build Settings has iPhone/iPad selected for the Targeted Device Family setting under the Deployment section.
Here's what happened to me ... when I updated to the latest version of XCode (4.3.2) I didn't bother to uninstall the previous version. I mistakenly opened my iOS 5.1 targeted project in the older version of XCode that does not know about 5.1 and as a result the simulator was not available. So i would check for the following:
See which version of XCode you're currently running
Try checking your iOS Deployment Target ... (Targets -> Deployment). If iOS 5.1 is selected change it to iOS 5.0 (the simulator will show up immediately)
