I am using Jquery mobile along with OpenLayers mobile.
I want to give users the ability to draw features like lines and polygons. I would also like to give them the ability to "write" an annotation and place the text at a point on the map.
Does anyone have a small example of how to add text to the map?

Use some JavaScript and HTML text input to achieve the text input.
To save your annotations you can try exporting and importing geojson
You can set text on a map marker: marker.icon.imageDiv.title = 'yourTitleHere';

Is there a way to change the layout of the hovertool's tooltips? I mean, bokeh shows the standard square with some information, close to the point and linked by a small triangle.. Is there a way to change this triangle and put a line that connects the tooltip to the point but at some distance (like an annotation), but dynamic as a hovertool tooltip?

It is possible but it requires quite some work. You have to create a custom subclass of Tooltip that renders the tooltip the way you want and a custom subclass of HoverTool that uses that tooltip class.
Some plot points in my dataset need to be highlighted. Ideally I would like to be able to do the following:
Id like to display arbitary HTML at a particular X location (with a Y of my choosing)
Id like to replace certain markers with HTML
Is this possible? I cannot seem to find any documentation on how to do it?
I can add a custom SVG element to a chart like the wind arrows in the meteogram example. Note how the look of each individual wind arrow is customized with the parameters (a) wind speed and (b) direction.
I can also place custom SVG markers on to a series like the cross in the custom markers demo.
The latter approach has the advantage that if I have a zoom-able chart (Highstock) the markers will stay where they are supposed to be when zooming/panning. However, the latter example does not allow parameter dependent customization of the SVG marker!
Is there a way to combine these two? As in, I want custom SVG markers, that are bound to the series but whose shape is determined by other external parameters.
i like to show additional informations on a highchart graph by clicking on a datapoint. I like to visualise this "clickpoint" by setting a flag. That can be done linke the sun that will be shown here: http://www.highcharts.com/demo/spline-symbols/gray
But i did not find any information in the api how to make this marker clickable. Isnt it possible? In the highstocks API i found clickable flags that can be set. But i need to use the highcharts api only.
Maybe some of you have solved this problem and an give me some hints.

I'm looking for a free iOS component that allows me to draw a doughnut chart with text in the center. So far I've only used Code Plot, but that is a full pie chart.
I'm attaching an example of the requirement.
Any help will be much appreciated.
I suggest searching on cocoacontrols.com. They have lots of open source controls for iOS and Mac. I didn't se any specifically called "doughnut chart" but some of the pie charts controls might offer that option.
In fact, it seems that this one does include what you're calling a doughnut chart. It doesn't look like it has built-in support for a label in the middle, but it does create a ring-shaped chart like you want.
You could also always create a pie chart and then put a view on top of it that is transparent except for a white circle in the middle, and then put a label on top of that.
Getting a little more complex you could modify the CorePlot control and add a filled CAShapeLayer to it.
Another option is to create svg chart and use UIWebView to display it. With svg chart, you get much more flexibility with libraries like highcharts and d3js. Here's an example with donut chart:
