Preferable free, open source, vcl. For Delphi 2007 or above and win32.
Have you looked at Workflow Studio? You say you prefer free and open source, but is it a requirement? If not, Workflow Studio isn't very expensive (249 EUR for single developer license, 795 EUR for site license with source code).

I'm about to begin a project where I will be attempting to create an iPad app that can render reports from a SSRS report server. I really don't know where to begin with this project. Does anyone have any recommendations on a good way of doing this? Any help is appreciated.
I would probably download this app and see if it meets your needs before reinventing the wheel - http://itunes.apple.com/us/app/mobi-ssrs/id457786540?ls=1&mt=8

I want to learn Delphi, does anyone know of a good free program that would let me write code with Delphi?
I want to learn as many languages as I can, I already kinda know C#, some LUA, some VB and Java, but I want to know more. For the sake of knowing I guess.
You can use Lazarus FreePascal.

Can someone please provide a simple example of how to consume a REST service using Delphi 2005?
The service appears to provide both XML and JSON, so I haven't decided which one to use.
Head to Delphi REST Clients Collection by Marco Cantù where you can find lots of code on the topic.
It's good for you. I wish you good luck

Were can I find some good Podcasts that talk about program with Delphi & the whole software lifecycle
The Podcast at Delphi
http://www.delphi.org/
Also, you specified "software lifecycle" so there is another great podcast I like which is really language agnostic and that is Software Engineering Radio:
