There are some source files for iphone apps with the formats such as .m & .h
I want to know whether normal users or developers can access such files when you put an app into AppStore.
No, you can not access these files.you can see only resources of the app.

Could you please point me to the documentation, where the meaning and format of all files inside iOS app source is explained? I'm trying to understand the architecture of iOS applications, behind the UI of Xcode.
Change the extension on the app from ".ipa" to ".zip". Then double-clock to unzip. Examine the unzipped folder's contents.

I have created an iPad app which downloads some confidential data and stores it in the document folder.
I was reading about the security of data on an iPad, and I found that there are some applications which reveal all the data and folders of an app.
Is there any way to avoid that, and to secure my data or a whole folder?
For storing confidential information use KeyChainItemWrapper

In my application I have to read a file that have be created by another application on my device.
How it can be done. The file must be located on file System's root directory

Unless you are writing for Jailbroken devices, you can't access files outside of your app's sandbox.
So, for apps distributed through the App Store, you can't do this.

I want to test my web on ipad or others.But i don't know how to do. I want to see display in different screen.And I want to test the function on different platform. Can you tell me any tools or any website ?
Do you mean you want to test your app on an iPad ? If that's what you mean then you need a developer account (developer.apple.com), then register the device. There are guides in the Dev Library for that :)

I am relatively new to iOS dev, and wanted to ask the community for guidance, links or hints on how apps that read files are made and from where to start( I want to practice this part but didnt find tutorials on it).
You can use QLPreviewController for displaying excel and PDF files
